Buffalo Chicken Dip with Red Pepper Jelly

Was it Super Bowl Sunday that just happened, or Buffalo Chicken Dip Day? Or are they one in the same? I think that’s it. Because how can you have a Super Bowl watch party and NOT have buffalo chicken dip? It’s unfathomable.

Yes the Super Bowl happened last weekend and the Falcons stomped on our hearts (what the hell happened?), but trust me, buffalo chicken dip isn’t just for the Super Bowl. Anything worth calling a “party” needs dip (this is science), so think of all the other social opportunities coming up: March Madness, the Oscar’s, Friday night alone on your couch, etc.

You know I can’t make anything traditionally, there always has to be a twist. In my buffalo chicken dip, I like to use the Fire! Pepper Jelly by Wisham Jellies (you may recall that jelly company from this recipe, and that one).

Buffalo chicken dip is a little bit spicy to begin with, but the jelly adds a hint of sweetness and a new layer of heat. Plus the pepper flavor is nice too. You’ll have leftover jelly, so here’s another suggested use:

Buffalo chicken dip is undeniably easy to make. ESPECIALLY if you buy shredded chicken from Sprouts. I can’t stress this enough! They sell it by the half pound which is the perfect amount. It’s plain shredded chicken. This will save you from shredding your own… think about all the things you can do with that extra time!

Buffalo Chicken Dip with Red Pepper Jelly

Ingredients:

1 cup shredded chicken
1 8oz block of cream cheese or neufatel, slightly melted
1/2 cup sour cream
2 tablespoons Fire! Pepper Jelly
1/2 cup buffalo sauce
1/2 cup shredded cheddar cheese (plus extra for topping)
1/4 cup blue cheese crumbles

Instructions:

Preheat oven to 375.

In a medium bowl combine the ingredients. You may want to get in there with a fork to break up the jelly, it will clump (sorry, I know that’s not sexy).

Spread mixture in baking dish, top with extra cheese, and bake for 25 minutes. Dip should be golden on top and bubbling.

Serving Suggestion: If you want to keep things a bit lighter try scooping your buffalo chicken dip into endive. Endive is the perfect low-carb vessel for this type of thing!
